Pork Dry Fry, Another mouth watering item from the Assamese kitchen

PREPARATION TIME:- 20 mins
COOKING TIME:- 25 mins
SERVING :- 4 pax

INGREDIENTS:

1) 1/2 kg  —– Pork meat with fats (cut into small pieces)
2) 2 tbsp  —–Ginger (minced)
3) 3 nos  —– Onions (sliced)
4) 3 tbsp  —–Garlic (minced)
5) 1 tsp    —– Red chilly powder
6) 1 tsp    —– Mustard oil( optional)
7) 1 tsp    —– cumin powder
8) 4-5nos —- Green chillies (slitted)
9) 1/2 tsp  —- Turmeric
10)1/2 tsp —- Paachphuran
11) —         —– Salt (to taste)

METHOD:-

* Heat oil in a kadhai, when its hot add the  paachphuran.

* When the seeds splutters add the pork pieces with salt and let it simmer,stirring in between.

* When water from the meat dries up and it starts to yield oil add in the onion slices, ginger, garlic and chillies and fry for some time.

* After some time add turmeric,cumin powder and red chilly powder and fry the meat until its cooked, add water and salt if necessary.

* Serve hot.
