Karbi style Pork with Dimaru Leaves and Pithaguri. Dimaru tree’s leaves are used in the recipe. Dimaru trees are quite common in NE India. Dimaru leaves are used by tribes such as Bodos and Karbis in their cuisine. 

Ingredients:

1. Pork (Should be 60% oil or fat) – ½ Kilo
2. Dimaru Leaves – 10-15
3. Pithaguri (Rice flour) – 1 ½ Cups
4. Ginger-Garlic paste – 2 Tbsps
5. Kol Khar – 1 Tbsp
6. Green Chilly – 2-3
7. Salt – To taste

Method:

• Heat pressure cooker
• Add Ginger-Garlic paste and Green Chillies
• Add Kol Khar
• Add grinded Dimaru leaves and Salt, Stir for sometime.
• Add 1 ½ Cups Water
• Add the pork. Stir
• Add the pithaguri and mix well
• Close the lid and cook for 6-7 whistles.
• Serve..
