INGREDIENTS:-
1) 2 cups —— Gram flour (besan)
2) 1/2 cup —— Coconut( scraped)
3) 1 cup —— Yogurt
4) 1 tsp —— Chilly and ginger paste
5) 1/2 tsp —– Turmeric powder
6) 1 tbsp —– Lemon juice
7) 1 tsp —– Soda bicarbonate
8) 1 tsp —– Mustard seeds
9) 2 tbsp —– Coriander leaves (chopped)
10) 2 tbsp —– Oil
11) — —– Salt (to taste)
METHOD:-
* In a bowl take gram flour and yogurt and 1 cup of water and mix,avoiding lumps.
* Add salt and mix again, leave it aside to ferment for three to four hours.
* When fermentation is done, add turmeric powder and green chilli-ginger paste and mix.
* Heat the steamer and grease a thali.
* In a small bowl take lemon juice, soda bicarbonate, one teaspoon of oil and mix and add it to the batter and whisk briskly.
* Pour batter into the greased thali and place it in the steamer. Cover with the lid and steam for ten minutes.
* When its done let it cool and cut into squares and keep in a serving dish.
* Heat remaining oil in a pan and add mustard seeds,when the seeds begin to crackle, remove and pour over the dhoklas.
* Garnished with chopped coriander leaves and scraped coconut.
* Serve.
