11. 3tbsp mustard oil.
Brush brinjals with oil and roast.frequently turn the brinjals upside down untill fully roasted.Once done,cool and peeloff the skin and mash well.
Heat oil in a pan ,add onion+Ginger+garlic+g/chilli+spring onion .stir well for 2/3 min and add haldi and salt to it.Add the mashed brinjal and fry for 5/6 min.Before putting off the gas just break the eggs over it and mix well.Garnish with g/coriander and serve hot.(tomato and g/peas can also be added).
