Duck Roast -Grilled in banana leaf for extra flavor

1 Duck-dressed
2 large onions finely sliced
3 tbs onion paste
2 tbs ginger paste
1 tbs garlic

1 Duck-dressed
2 large onions finely sliced
3 tbs onion paste
2 tbs ginger paste
1 tbs garlic paste
1 tsp coriander
1 tsp cumin
salt,pepper
1 Whole bay leaf,
3-4 pc green cardamom
1/2 cup Oil/Ghee
1 large banana leaf,washed.

Marinate duck in onion,ginger garlic paste ,salt and the coriander cumin powder.
In a heavy based pan heat the oil .
Add the bay leaf and cardamom.
Add onions, fry till light brown .Remove.
Now fry the duck along with the marinade , salt to taste and pepper till oil separates.Add 1/4 cup water lower heat,add the fried onions and cook uncovered till water evaporates.
Take the duck (and masala)out.Wrap in banana leaf and roast over hot coals till done.
Garnish with fried onions(optional)

NB This is NOT a traditional mainstream Assamese dish but one can loosely term it Fusion Assamese(British,Assamese and Mughal influences)
