Idli- A staple of south Indian cuisine. Idli also romanized idly or iddly, plural idlis, is a traditional breakfast in south Indian households. Idli is savory cake of South India that is most popular throughout the southern part of India including Karnataka, Tamil Nadu, Pondicherry, Kerala, Andhra Pradesh and neighbouring countries like Sri Lanka
Ingredients:
2 cups par boiled Rice
1 cup Urad Daal (white)
1 1/2 tblsp Salt
A pinch of baking soda
Oil for greasing
Method:
Wash and soak the daal and rice overnight or for 6-7 hours
First grind the urad dal well until it is light and fluffy.
Now grind the soaked rice along with little water. Grind rice to a smooth paste.
Now mix the grinded rice and daal together into a batter.
Mix salt, baking powder and set aside in a warm place for 7-8 hours or overnight for fermenting.
Next day mix the fermented batter well. Now it is ready for making idli.
Grease the idle holder or pan well with oil and fill each of thm with 3/4th full of batter.
Steam cook idlis on medium flame for about 10 minutes or until done.
Use a butter spoon to remove the idlis.
Serve them with sambar or coconut chutney.
