(This is the traditional recipe made in Greek kitchens and one of my favorite, easy to made, healthy and nutritious as well.)
PREPARATION TIME :- 15MINS
COOKING TIME :- 90 MINS
SERVING :- 4 Pax
1.700 gm ———- chicken
2.2 quart ———- water
3.3 nos ———- egg
4.2 nos ———- lemon
5.1 no ———- onion
6.1/2 cup ———- rice
7. —- ———- salt and pepper to taste
*Rinse the chicken well and place it in a pot,fill it with enough water to cover it by 1 inch, add the onion too and and bring to a boil. when boiling, reduce the heat and simmer for half an hour and skimming the fat from the top as it collects.
*Add salt and pepper, when its done remove the chicken and strain the stock.
*Again place the strained stock in the same pot and add rice to it. And again simmer for 20 mins till the rice is tender.
*In a separate bowl whisk the eggs along with the lemon juice.
*When the rice is done, turn off the heat. Whisk one ladle full of hot broth into the egg mixture slowly so that the egg mixture do not curdle. Gradually whisk in more broth until the egg mixture is heated. Then pour the egg mixture back into the pot, whisking briskly. The result should be a creamy, cloudy looking soup.
*Taste for correct seasoning and remove from stove, garnish with chopped celery or coriander leaves.
Well honestly my taste bud says that– add some chopped garlic, cloves and bay leaves at the time when the chicken is boiling for a better taste and flavor.
